You could also go with a Digital8 camera and transfer with firewire. That's a straight digital transfer.
If you do decide to go with analog you can get something like this - I used to use a Dazzle converter with firewire that worked well. I still use it to convert VHS for family and freinds. If you can find an old Sony TRV120 you can use that as a passthrough. Hook your analog VHS camera to the input of the TRV120 and then take the firewire out to your MAC to capture the video. The bonus is you'd have an extra camera. The TRV120 was not a bad little camera. I had 3 of them at one time and shot high school musicals with them.

Seems to me I remember getting a battery adapter for my old RCA VHS camera that you could load with AA batteries and it fit on the camera just like the original battery. I don't think you are looking far enough back. Even VHS cameras and recorders predating the combined camcorder take good video. Although they were shooting for NTSC display (or as needed depending on local TV standards) and it's not usual to still have tvs using that standard for everyday viewing (at Grandma's house anyways). It's lower resolution when it comes to lines displayed, etc., but it's not all static, etc. Home movies could be kind of grim but even those, if handled well and projected well weren't too bad. Done badly, yeah.

From my experience you can certainly add time in the bottom corner. Actually adding the time in the corner while editing would probably be easier because once you try to edit footage with existing time (shown in the corner of the footage) it may skip around and be inconsistent because you're editing around everything.
